Poha is basically a fried beaten rice snack.
This is made all over India and known by various names and the recipe too varies with the spices. This is how its made in West Bengal and I have recreated from childhood memories. It is Y-U-M!
How to make :
«Poha»
Ingredients:
1. One medium Onion, chopped
2. One small potato or half the one in the picture, chopped
3.400 gms beaten rice
4.Green Chilli , chopped
5.One stick of Cinnamon
6.One Bay leaf
7.Sea Salt to taste.
8.Two tablespoon sugar
9.Garam Masala
10.dry Basil to garnish.
Method:
1. Wash the beaten rice and dry. Keep aside.
2.Heat around 3-4 tbsp of olive oil in a pan and fry the bay leaf and chilies.
3.Then add onions,garam masala, raisins and nut and fry tile translucent.You may add a bit of tumeric powder for colour.
4. Add the potatoes, salt and a little sugar and fry till potato is soft.You make also add other steamed vegetables like cauliflower, carrots or peas.
5.Fry them all well and then add the beaten rice and mix well.
6.Add some salt and sugar to finish it off.
7.Garnish with some dry basil and serve hot!
